I remember being able to watch online somewhere before without a subscription. Maybe I’m crossing my Olympics.

NBCOlympics does not require a subscription but you need to input your cable service provider.

A VPN should get whatever the europeans are using to view it, right? I bought peacock and went for the ad-free version (though I am still getting some ads) because for 1 month, I can swing that 8 bucks or whatever. Someone remind me to cancel it though! ;-)

No. Eurosport/discovery have the main broadcast rights in Europe. Subscription required. BBC and other national broadcasters are allowed to show a maximum number of hours per day.
