The number of Chinese people watched women gymnastics team final in Olympic 2008 is unknown. But according to CCTV, In China, the The Olympic 2008 have attracted nearly everyone's attention in China. CCTV's market survey department says more than 81 percent of the Chinese population closely followed the games through TV, radio, the Internet, or new media like TV on mobile phones. And table tennis, diving, gymnastics, basketball and volleyball remain among the favorites for Chinese viewers.

According to sportsbussinesjournal ; the Beijing 2008 Olympic coverage of 13.8.2008 (day of women gymnastics team final) peaked at 41.2 million views in US during the women gymnastics team final and a men swimming event).

And according to Guardian , the 2008 Olympic women gymnastics team final attracted 3.5 million views in UK. Despite the Great Britain team did not compete.

The number of American people watched the women gymnastics team final at Olympic London 2012 is very huge.

I think that 2008 was the last Olympics where streaming really wasn’t yet a thing. Numbers since then are harder to track.

Regarding the figure of 3.5 million in GB, that isn’t surprising. People in GB enjoy watching gymnastics competitions. Every time GB hosts anything, it sells out.
 
The numbers of viewers of Women WAG team final of Atlanta 1996 is huge. According to Worldatlas, 38.7 million American people watch the final (where Magnificent Seven won the gold).

Atlanta was watched because it was a home Olympics, but also because it was on tape delay.
Back then very few were on the Internet at the time. We didn't get Internet until 1998 for example.
Results were not easily available and therefore not spoiled.

Once people know the results, they likely might not watch it.

Yep. This plus the Olympics was simply a much bigger deal then than they are now. It wouldn’t surprise me at all if 1992 and 1996 had the highest Olympic viewing figures ever. Across all sports.
 
According to Los Angeles Times, the women gymnastics team final of Olympic 2016 averaged 33.44 million viewers in the US.

And the women gymnastics team final of Olympic 2020 averaged 14 million viewers in the US.

I think viewership would have been higher also in a situation like Beijing because they were aired live in prime time. You couldn’t get the results ahead of the broadcast like you could for Paris.
